Finally decided to upgrade my tires from the Stock SRAs. I've only put 12k on them in two years and I can't wait any longer.

I've searched this forum up and down about recommendations and I've narrowed down my choices to:

BFG KO2 275/70/17

Duratrac 255/75/17

I'm leaning towards the looks and size of the KO2s, even though they're about $200 more installed.

Will the weight of the E rated KO2 (55lbs each) make my Jeep sluggish? I don't want to take a huge hit on fuel economy....i have a JKU Sport S 3.21 gearing.

I don't think your Jeep will feel sluggish with the KO2 but your fuel economy will slightly take a hit. I am currently running 275/65R18 duratracs with wheel spacers which equals to about 10lbs added per wheel over my previous stock set up and I'm currently burning about 8% more fuel with that set up over stock, based on my observations over the past few months.
