I think that's a great set-up. I camped over the weekend with big group and one guy had used that size tire/wheel for expeditions; he recommends the Cooper Discoverer S/T for a good all-around tire. Cooper makes many of the esoteric Jeep boutique tires like Cepek and ProComp anyhow...

On stock 16in rims you can safely go 265 width.

Cooper tires are good, they are the same company as Avon tires..

I have also heard Hankook tires are good. Both are more reasonably priced than many other brands

The 255/85-16 appears to be the perfect tire for the 2-door though. Both the Rubi and Sahara come with tire/wheel combinations that promise a 32" tire; the Sahara's 255/70-18 is barely more than a real 31" however and the Rubi's is scarcely larger.
But the 255/85-16 tops 33" from almost every manufacturer. It's not wider than stock and doesn't change the OE contact patch; no increased rolling resistance, no spacers needed, and you usually don't need any lift --- urethane spacers or 1" BL if anything.
