I was just checking out different style wheels and I saw that there are 2 piece wheels and 3 piece wheels. What does that mean? And another thing, positive backspace on your wheels means that they are "deep dish" like? Right?

Backspacing is the measurement between where the Wheels contacts the hub and the back lip of the wheel. "Dish" is more about offset.

2 and 3 piece wheels are generally more expensive, lighter, some times stronger wheels. Most of us run 1 piece wheels. They may have a fake bead lock ring, but that's about it. Let me know what questions you have!
