I have heard nightmares about aftermarket thermostats. My OEM housing is cracked but the thermostat itself is still good, OEM on backorder. Question is can I take the thermostat guts from the OEM and put inside an aftermarket housing and it work.

Technically, you should be able to swap out the thermostat housings while keeping the same "guts".
However, I think Mopar has a "store" on Amazon that might have the correct thermostat with housing available:
