Everything you mentioned is normal to an extent. JK's don't handle like "cars". I have to say slow down a bit. Making a turn at 25 is a bit fast. Jeeps can do a lot of things but they can't escape physics. Slow down and enjoy the ride. The tire pressure situation I'm sure was coincidental when you put gas in it. The tire probably heated up enough and after driving awhile the pressure came up. You really have to check the tire pressure at least every 2-3 weeks max.
My Rubicon can take 35 MPH turns at 55 MPH just fine. I don't know where everyone gets the "horrible handling" thing from. The JKs are the best handling Wranglers yet.
